The students of Paramus High School’s LEAP Program created a gingerbread display for the Frelinghuysen Arboretum’s Holiday Exhibit in Morristown, New Jersey. After searching for inspiration on their computers, the class decided on the theme of “i-Gingerbread,” featuring gingerbread Apple products all around a Christmas tree with an excited gingerbread boy looking on. They created the cookie dough from scratch, following a recipe on the flyer for the contest.
After baking the treats, they decorated them with fondant, sugar paper and chicklets dyed to look like apps. The process included a lesson on using fondant from Supervisor of Building Maintenance, Billy Castalonea. When their colorful display was finished, it was brought over to the Arboretum.

On December 6, 2012, the entire class took a trip to Morristown in order to see all of the different gingerbread houses and scenes. They looked around the room and then entered a vote for their favorite display. While there, they received a ribbon for participating in the show. Afterwards, they toured the grounds and were permitted to investigate the former Frelinghuysen house, now the office of the Morris County Park Commission.
